Ingredients
  

  • 2 lbs of ground venison
  • 2 large diced onions
  • 4 cloves of garlic minced
  • 2 diced red bell peppers
  • 2 cans 14.5 oz each of diced tomatoes
  • 1 can 6 oz of tomato paste
  • 2 cans 15 oz each of kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional garnishes: shredded cheese sour cream, sliced green onions, chopped fresh cilantro

Instructions
 

  • Heat a large pot over medium heat. Add a splash of olive oil, then add the ground venison. Cook until browned, breaking it up as it cooks. Remove the meat from the pot and set aside.
  • In the same pot, add a bit more olive oil if needed. Add the diced onions, minced garlic, and diced bell peppers. Cook until the vegetables are softened.
  • Stir in the chili powder and cumin, then add the tomato paste. Stir until everything is well coated.
  • Add the diced tomatoes (with their juice), kidney beans, and cooked venison back into the pot. Season with salt and pepper.
  • Lower the heat and let the chili simmer for about 30 minutes, stirring occasionally. This will help all the flavors meld together.
  • Taste and adjust seasonings if necessary.
  • Serve your venison chili hot, topped with your choice of shredded cheese, sour cream, sliced green onions, and/or fresh cilantro.

Tips & Variations:

For a spicier chili, add a diced jalapeño or two during step 2.
If you're following a low-carb or paleo diet, you can leave out the beans.
Feel free to substitute ground beef or turkey for the venison if that's what you have on hand.
A splash of beer or red wine added along with the diced tomatoes can add depth of flavor.
For a smoky flavor, add a teaspoon of smoked paprika.
