Ingredients
  1. 1 pheasant or 1 Turkey (choice is yours)
  2. ½ cup pancake mix or flour
  3. 1/4 cup butter or cooking oil
  4. 1 small onion
  5. 1 package mushrooms
  6. 1 can chicken broth
  7. 1 bag frozen mixed vegetables or peas, carrots, anything with color
Instructions
  1. If you’d like, marinate chunked-up pheasant in Italian dressing first.
  2. While the bird is marinating, sauté mushrooms and onions in butter until they release liquid.
  3. Then, pat them dry and dredge in flour (add seasoning if you’d like) or the pancake mix.
  4. Brown pheasant in the pan, but don’t fully cook it – add onions and mushrooms back to the pan, and add chicken broth.
  5. Simmer for 30 minutes, stirring now and then.
  6. Add the veggies and simmer for another half-hour, adding more broth if needed.
Notes
  1. Suggested Serving: Serve this wild game recipe dish over mashed potatoes, egg noodles,
  2. wild rice or biscuits.
