With the winter winds of the holiday season blowing it brings many of us hunters back to day dreaming of sitting in the duck blind waiting on a final approach. This wild game recipe helps us relive those moments by using wild duck taken just the month before.

Ingredients
  1. 1 duck
For the Brine
  1. 1 cup sugar
  2. 1/2 cup salt
  3. 1 cup pickling spice
  4. 1/2 gallon orange juice
For the Sauce
  1. 1 cup sugar
  2. 1 cup red wine
  3. 1/2 cup white balsamic vinegar
  4. 2 cups orange juice
  5. 4 cups duck stock, described below
Instructions
  1. Mix brine ingredients and bring to a boil to melt sugar and salt. Cool.
  2. Cut breast and leg quarters from carcass and soak in brine at least overnight.
  3. Meanwhile, to make stock, roast duck carcass in oven set at 450 degrees until brown—about 15 to 20 minutes.
  4. Place in a large pot and cover with water. Simmer 2 hours, ensuring the carcass is below water. Reserve liquid.
  5. To make sauce, put sugar in a pot and cook until caramelized to a deep brown, about 5 minutes. Stir frequently. Be sure not to burn the sugar.
  6. Add all liquid ingredients and cook for 20 minutes until reduced by half.
  7. Salt and pepper to taste.
  8. Smoke brined duck pieces in a smoker or on a grill using hickory or a fruit wood, such as apple or cherry.
  9. Cook to about medium, slice meat and arrange on plate.
  10. Drizzle with sauce.
